I like the idea to try to represent visually (using a drawing) the
implications of a technical choice for strings encoding,
I guess it would be interesting to draw 2 pictures:
1. the technical areas covered for every type of string encoding (kinda
similar to the graph you provided),
2. the volumes of data managed by the different encoding

this may provide some perspectives in the discussion in order for every
developer to build their own personal opinion on the question of the choice
for string encoding,
